Side dishes are very important. It’s not something that you just ignore because they’re also a fundamental part of a meal. They can be very easy & simple. But sometimes with just a little bit of an extra touch of seasoning or a different variation of ingredients, it can turn out to be so tasty that you’ll end up enjoying them even more then anything else on the plate. It all needs a little bit of love!

Zesty Baked Vegetables
A colorful variation of veggies baked in the oven with a zesty kick to it.
Ingredients
- 8 tbsp olive oil
- 4 tbsp lemon juice
- 3½ tsp smoked paprika
- 2 tsp curry
- 1½ tsp onion powder
- 3 tsp garlic powder
- Salt & pepper
- 150 g cherry tomatoes
- 150 g red onion sliced
- 300 g potatoes chopped
- 250 g sugar snap peas
- 120 g carrots chopped
- 210 g green beans
Instructions
- Preheat oven at 200C.
- In a bowl, mix the olive oil, lemon juice, smoked paprika, curry, garlic powder, onion powder, salt & pepper.
- Mix the vegetables with the oil mixture & put them in an oven dish. Cover the dish with aluminium foil. Cook in the oven for 90 minutes.
- Uncover the dish & cook for 15 minutes.
