I love these kind of dishes, they make life so much easier & also tastier! This One-Pan Prawn & Veggie Rice is so colorful, you can say that the first thing to feast are the eyes. Also the smell is amazing. Everything turned out so delicious & the prawns cooked perfectly.
One-Pan Prawn & Veggie Rice
Such a colorful dish. Prawns with colorful veggies & rice, everything mixed in one-pan!
Ingredients
- 400 g rice
- 1500 ml vegetable stock
- 2 tbsp olive oil
- 2 tbsp butter
- 180 g leek sliced
- 20 g garlic diced
- Salt & pepper
- 250 g green beans frozen
- 100 g carrots sliced
- 140 g sweet corn canned
- 450 g prawns
Instructions
- In a casserole pan, heat the oil & melt the butter.
- Add the leeks & garlic to the pan. Season them with salt & pepper. Cook for 5 minutes over medium to high heat, stirring occasionally.
- Add the green beans, carrots, sweet corn, stock & rice to the pan. Bring to a boil & then let simmer for 20 minutes. Add the prawns to the pan & cook with the pan covered for 5 minutes, over low heat.
