Baked Salmon Fillet with Zesty Veggies

I love to cook something delicious just in a one-pan way, who doesn’t?! It’s simple, easy & so flavorful. This time I wanted to try this out Baked Salmon, seeing that it’s my favorite fish to eat. I didn’t want to add any heaviness by including potatoes or rice, which are ingredients that my family loves to eat with fish. So this time I opted with a vast mixture of colorful, delicious veggies & let me tell you we were so happy with all of it. The colors where amazing as you can see from the photos but most importantly the taste was on point. We were left full but not with a heavy filling in our bellies. The zest that was added to the veggies worked wonders together with other flavors such as garlic, olive oil & dill.

Baked salmon is such a great meal on it’s own & to make things even more yummy, a crispy skin on a very tender piece of salmon fillet! Mouthwatering & simply falls apart at the touch. A very recommended recipe by my family indeed! If this didn’t still convince you, check out the yummy photos…I believe they speak for themselves!
