Baked Salmon Fillet with Zesty Veggies

I love to cook something delicious just in a one-pan way, who doesn’t?! It’s simple, easy & so flavorful. This time I wanted to try this out Baked Salmon, seeing that it’s my favorite fish to eat. I didn’t want to add any heaviness by including potatoes or rice, which are ingredients that my family loves to eat with fish. So this time I opted with a vast mixture of colorful, delicious veggies & let me tell you we were so happy with all of it. The colors where amazing as you can see from the photos but most importantly the taste was on point. We were left full but not with a heavy filling in our bellies. The zest that was added to the veggies worked wonders together with other flavors such as garlic, olive oil & dill.

Baked salmon is such a great meal on it’s own & to make things even more yummy, a crispy skin on a very tender piece of salmon fillet! Mouthwatering & simply falls apart at the touch. Baked Salmon Fillet with Zesty Veggies

Ingredients
  

  • 600 g salmon fillet
  • Salt & pepper
  • 10 tbsp olive oil
  • 1 tbsp dill
  • 30 g capers
  • 250 g cherry tomatoes
  • 200 g aubergine sliced
  • 90 g red onion sliced
  • 150 g yellow bell pepper chopped
  • 160 g asparagus cut into 3 pieces
  • 2 tsp garlic powder
  • 3 tbsp lemon juice

Instructions
 

  • Preheat oven at 180C.
  • In a bowl, mix olive oil, salt, pepper, dill, garlic powder & lemon juice.
  • Brush the bottom of a sheet pan with 3 tbsp of the oil mixture.
  • Spread all the veggies around the pan, putting the aubergines on the bottom & spread the other vegetables on top. Drizzle 7 tbsp of the oil mixture on top of the vegetables.
  • Cover the pan with aluminium foil & cook in the oven for 30 minutes.
  • Take the pan out of the oven & uncover the pan. Place the salmon in the middle of the pan & brush the salmon all over with the remaining oil mixture. Cover again with the aluminium foil & put the pan back in the oven. Cook for 15 minutes.
  • Uncover the pan & cook in the oven for 15 minutes.
