Courgette Soup (Soppa tal-Qarabali)
A creamy, delicious soup. This recipe is by my mother-in-law.
Ingredients
- 270 g courgettes chopped
- 90 g carrots chopped
- 60 g leek sliced
- 220 g potato chopped
- 2 chicken stock cubes
- 130 g rice
- 2 litres water
- 8 wedges The Laughing Cow or something similar cut into cubes
Instructions
- In a saucepan, add the courgettes, carrots, leeks & potatoes. Add the water & chicken stock cubes. Bring to boil.
- Simmer for 60 minutes.
- Mash the vegetables a bit with a potato masher.
- Wash the rice & add it to the saucepan. Cook for 25 minutes over medium heat.
- When serving, top the soup with The Laughing Cow cubes or something similar. Let it melt into the soup.
