Courgette Soup (Soppa tal-Qarabali)

A creamy, delicious soup. This recipe is by my mother-in-law.

  • 270 g courgettes chopped
  • 90 g carrots chopped
  • 60 g leek sliced
  • 220 g potato chopped
  • 2 chicken stock cubes
  • 130 g rice
  • 2 litres water
  • 8 wedges The Laughing Cow or something similar cut into cubes


  • In a saucepan, add the courgettes, carrots, leeks & potatoes. Add the water & chicken stock cubes. Bring to boil.
  • Simmer for 60 minutes.
  • Mash the vegetables a bit with a potato masher.
  • Wash the rice & add it to the saucepan. Cook for 25 minutes over medium heat.
  • When serving, top the soup with The Laughing Cow cubes or something similar. Let it melt into the soup.
