This Tortellini Soup recipe is inspired by my mother-in-law & it's a such a heart warming dish. It's my husband's favorite childhood soup & now it's a family favorite.
- 60 g leeks sliced
- 130 g carrots chopped
- 280 g courgette chopped
- 55 g celery chopped
- 2 tbsp tomato paste
- 2 chicken stock cubes
- 200 g cheese tortellini
- 2.5 litres water
- In a saucepan, add the leeks,carrots, courgette, celery, water, tomato paste & stock cubes.
- Stir everything together. Start cooking & bring to boil
- When boiling, lower heat & simmer for 60 minutes.
- Add the tortellini. Let cook till the tortellini are cooked, approximately for 20 minutes.
