Mediterranean Prawns with Courgette Spaghetti
Ingredients
Prawns
- 600 g tomato sauce
- 2 tsp tomato paste
- 1 tbsp capers
- 20 kalamata olives no pit
- 1 medium yellow onion chopped
- 4 cloves garlic minced
- 1 tsp Italian seasoning
- 450 g prawns
- 1 cube chicken stock
- 1 tbsp olive oil
Zucchini Spaghetti
- 400 g zucchini/courgette
- 1 tbsp wok oil
- salt & pepper
- 2 tsp garlic powder
Instructions
Prawns
- Heat up the frying pan & add the wok oil to it.
- Add the onion & garlic then season with salt & pepper. Cook over medium to low heat for 5 minutes stirring occasionally.
- Add the tomato sauce & tomato paste. Crush the stock cube in & also add the Italian seasoning. Mix well. Cook over medium heat for 4 minutes.
- As the tomato sauce starts to come to a boil, lower the heat & simmer for 10 minutes, stirring occasionally as needed.
- Add the capers, olives & prawns to the pan. Stir everything & cook for 10 minutes over low heat, covered.
Zucchini Spaghetti
- While the prawns are cooking for the last bit, start on the zucchini spaghetti. Heat up a frying pan & add the wok oil.
- Add the zucchini & the seasoning to the pan & stir well together. Cook over medium to low heat for 5 – 10 minutes, stir occasionally
- Serve the zucchini spaghetti & the prawns together & enjoy!
