One Pan Creamy Chicken, Broccoli & Lemon Rice

  • 400 g rice
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt & pepper
  • 125 g leek sliced
  • 600 g chicken breast cut into small cubes
  • 1 litre chicken stock
  • 200 g cream cheese
  • 1 tbsp parsley diced
  • 300 g broccoli chopped
  • 100 ml white wine
  • 2 tsp garlic powder
  • 1 tbsp chicken seasoning
  • 1 tbsp lemon peel grated


  • Heat the oil & melt the butter in a casserole pan.
  • Add the chicken breast to the pan & season it with salt, pepper, garlic powder & chicken seasoning. Cook for 6 minutes over medium to high heat, stirring occasionally.
  • Add the leeks & broccoli to the pan. Cook for 2 minutes, stirring occasionally.
  • Add the rice, lemon peel, parsley, white wine, cream cheese & chicken stock to the pan. Bring to a boil & then let simmer for 20-25 minutes.
