One Pan Creamy Chicken, Broccoli & Lemon Rice
A creamy & zesty rice dish with tender chicken. Such an easy recipe for busy days. A one pan recipe is always ideal!
Ingredients
- 400 g rice
- 2 tbsp olive oil
- 2 tbsp butter
- Salt & pepper
- 125 g leek sliced
- 600 g chicken breast cut into small cubes
- 1 litre chicken stock
- 200 g cream cheese
- 1 tbsp parsley diced
- 300 g broccoli chopped
- 100 ml white wine
- 2 tsp garlic powder
- 1 tbsp chicken seasoning
- 1 tbsp lemon peel grated
Instructions
- Heat the oil & melt the butter in a casserole pan.
- Add the chicken breast to the pan & season it with salt, pepper, garlic powder & chicken seasoning. Cook for 6 minutes over medium to high heat, stirring occasionally.
- Add the leeks & broccoli to the pan. Cook for 2 minutes, stirring occasionally.
- Add the rice, lemon peel, parsley, white wine, cream cheese & chicken stock to the pan. Bring to a boil & then let simmer for 20-25 minutes.
