Tomato & Curry Rice
A favorite of mine. The taste of curry makes it rich in taste. Simple but tasty!
Ingredients
- 350 g rice basmati
- Salt & pepper
- 2 tbsp olive oil
- 45 g butter
- 1 tbsp curry powder
- 1 tsp oregano
- 2 tbsp tomato paste
- 250 g cherry tomatoes halved
- 700 g tomato sauce
- 115 g white onion diced
- 25 g garlic diced
- 650 ml vegetable stock
Instructions
- Heat the olive oil & melt the butter in a casserole pan.
- Add the onion & garlic to the pan. Season them with salt, pepper, curry & oregano. Stir everything together. Cook for 5 minutes over medium to high heat, stirring occasionally.
- Add the tomato paste, vegetable stock, rice & cherry tomatoes to the pan. Cook for 2 minutes over medium to high heat, stirring frequently.
- Add the tomato sauce & bring to a boil. Simmer for 25 minutes.
