Mediterranean Prawns with Courgette Spaghetti

Juicy prawns simmered in a rich tomato sauce with olives & capers, served over fresh courgette spaghetti for a light & flavorful Mediterranean meal.

Ingredients
  

Prawns

  • 600 g tomato sauce
  • 2 tsp tomato paste
  • 1 tbsp capers
  • 20 kalamata olives no pit
  • 1 medium yellow onion chopped
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning
  • 450 g prawns
  • 1 cube chicken stock
  • 1 tbsp olive oil

Zucchini Spaghetti

  • 400 g zucchini/courgette
  • 1 tbsp wok oil
  • salt & pepper
  • 2 tsp garlic powder

Instructions
 

Prawns

  • Heat up the frying pan & add the wok oil to it.
  • Add the onion & garlic then season with salt & pepper. Cook over medium to low heat for 5 minutes stirring occasionally.
  • Add the tomato sauce & tomato paste. Crush the stock cube in & also add the Italian seasoning. Mix well. Cook over medium heat for 4 minutes.
  • As the tomato sauce starts to come to a boil, lower the heat & simmer for 10 minutes, stirring occasionally as needed.
  • Add the capers, olives & prawns to the pan. Stir everything & cook for 10 minutes over low heat, covered.

Zucchini Spaghetti

  • While the prawns are cooking for the last bit, start on the zucchini spaghetti. Heat up a frying pan & add the wok oil.
  • Add the zucchini & the seasoning to the pan & stir well together. Cook over medium to low heat for 5 - 10 minutes, stir occasionally
  • Serve the zucchini spaghetti & the prawns together & enjoy!
