Bell Pepper & Tomato Sauce Pasta

- 500 g pasta penne
- 2 tbsp tomato paste
- 400 g tomato chunks
- Salt & pepper
- 1 tsp dried celery
- 60 g green olives sliced
- 20 g garlic diced
- 130 g onion diced
- 460 g bell peppers chopped
- 480 g tomatoes chopped
- 1 tbsp olive oil
- 25 g butter
- 25 g capers
- ½ vegetable stock cube
Heat oil & melt the butter in a pan.
Add the onions, garlic, salt & pepper. Cook for 4 minutes over medium to high heat, stirring occasionally.
Add the tomatoes, olives & stock cube. Cook for 5 minutes over high heat, stirring occasionally.
Add the tomato paste & tomato sauce. Bring to boil. Simmer for 10 minutes.
In the meantime, boil the pasta.
When everything is cooked, mix together.
