Courgette Soup (Soppa tal-Qarabali)
A creamy, delicious soup. This recipe is by my mother-in-law.

- 270 g courgettes chopped
- 90 g carrots chopped
- 60 g leek sliced
- 220 g potato chopped
- 2 chicken stock cubes
- 130 g rice
- 2 litres water
- 8 wedges The Laughing Cow or something similar cut into cubes
In a saucepan, add the courgettes, carrots, leeks & potatoes. Add the water & chicken stock cubes. Bring to boil.
Simmer for 60 minutes.
Mash the vegetables a bit with a potato masher.
Wash the rice & add it to the saucepan. Cook for 25 minutes over medium heat.
When serving, top the soup with The Laughing Cow cubes or something similar. Let it melt into the soup.
