Heat the olive oil & melt the butter in a casserole pan.
Add the onion & garlic to the pan. Season them with salt, pepper, curry & oregano. Stir everything together. Cook for 5 minutes over medium to high heat, stirring occasionally.
Add the tomato paste, vegetable stock, rice & cherry tomatoes to the pan. Cook for 2 minutes over medium to high heat, stirring frequently.
Add the tomato sauce & bring to a boil. Simmer for 25 minutes.
